Red Wine

Red wine is a type of wine made by fermenting dark-skinned grapes with their skins, which gives the wine its colour, tannins, and depth of flavour. Unlike white wine, where skins are removed early, red wine undergoes fermentation with the skins intact—this process extracts colour compounds (anthocyanins), flavour, and structure. Styles range from light and fruity (like Pinot Noir) to bold and full-bodied (like Cabernet Sauvignon or Syrah), with flavours spanning red berries, blackcurrant, plum, spice, and earthy notes. Tannins—naturally occurring compounds from grape skins—give red wine its drying sensation and ageing potential. Red wine is produced all over the world, with famous regions including Bordeaux, Tuscany, Rioja, and Napa Valley. It’s often aged in oak barrels, which can add vanilla, toast, or smoky undertones.

Red wine pairs beautifully with rich, savoury dishes that complement its depth and tannic structure. Full-bodied reds like Cabernet Sauvignon and Malbec are ideal with grilled steaks, roast lamb, and hearty stews, where the fat and protein soften the wine’s bold tannins. Lighter reds such as Pinot Noir work well with duck, pork, mushroom risottos, and creamy cheeses, offering earthy elegance without overpowering the dish. Italian reds like Chianti or Barbera are classic matches for tomato-based pasta and Mediterranean fare, making red wine a versatile choice for everything from rustic suppers to refined roasts.

Sulphites are naturally occurring compounds used in winemaking to preserve freshness and prevent spoilage. While some people are sensitive to them, true sulphite allergies are rare. Most red‑wine headaches are more likely linked to factors such as tannins, histamines, dehydration or simply drinking too much too quickly. Sulphites are actually found in higher levels in many dried fruits than in wine.

Red wine is best enjoyed slightly cooler than most people expect. Lighter reds show beautifully at around 12–14°C, while fuller‑bodied styles are ideal at 15–18°C. Serving red wine too warm can make the alcohol feel harsh and the flavours muddled, whereas a cooler temperature keeps the wine fresh, balanced and more aromatic.

Light‑bodied reds include Pinot Noir, Gamay (Beaujolais) and some cool‑climate Grenache, known for their bright fruit and gentle tannins. Medium‑bodied options include Merlot, Sangiovese and Tempranillo. The heaviest styles — such as Cabernet Sauvignon, Syrah/Shiraz, Malbec and Nebbiolo — offer deeper colour, firmer tannins and more intense flavours.

Not always. Decanting helps young, structured wines open up by exposing them to oxygen, and it can also separate older wines from any sediment. However, many lighter or more delicate reds don’t require decanting and may even lose their charm if over‑aerated. As a rule of thumb, decant when a wine feels tight, closed or overly tannic.

Most red wines are made to be enjoyed within a few years of release, but certain styles can age gracefully for decades. Wines with high tannin, acidity and concentration tend to age best — classic examples include Cabernet Sauvignon, Nebbiolo (Barolo/Barbaresco), Bordeaux blends, Rioja Gran Reserva and some Syrah/Shiraz. Proper storage is essential: cool, dark, stable conditions will help a wine reach its full potential over time.
