While it shares production similarities with vodka and gin, EU regulations dictate that aquavit’s dominant flavour must come from distillates of caraway seeds, dill seeds, or both. Depending on the regional style, the taste can range from crisp and fresh with notes of aniseed and citrus, to rich, warm, and oak-aged with undertones of vanilla and caramel.
The primary difference between gin and aquavit lies in their signature botanical ingredients. Gin must be predominantly flavoured with juniper berries, giving it a pine-forward, resinous taste. Conversely, aquavit must be predominantly flavoured with caraway or dill, giving it a complex, rye-bread or herbal character. While both spirits start with a neutral grain or potato base and are popular choices for contemporary cocktails, aquavit offers a much more savoury, spice-forward alternative to classic gin.
Traditionally, aquavit is enjoyed chilled and served neat in a small tulip or shot glass, particularly during festive Nordic gatherings like Midsummer or Christmas. In Denmark and Sweden, unaged aquavit (often called snaps) is served ice-cold from the freezer alongside beer and pickled herring.
