High altitude is a defining characteristic of Argentinian viticulture, particularly in regions like Mendoza and Salta. Vineyards planted at elevated altitudes benefit from intense sunlight combined with cool night temperatures. This significant diurnal temperature variation slows the ripening process, allowing grapes to develop deep colour, concentrated flavours, and firm tannins whilst retaining a vibrant, refreshing acidity that prevents the wine from tasting overly heavy.

Whilst Malbec is undoubtedly the flagship grape of the country, Argentina boasts an incredibly diverse portfolio of wine styles. For white wines, the aromatic and crisp Torrontés is a unique native star, whilst high-altitude Chardonnay offers exceptional elegance. For alternative red varieties, Argentina produces outstanding, structured Cabernet Sauvignon, peppery Syrah, and increasingly acclaimed, fresh styles of Bonarda and Cabernet Franc.

The natural structure of Argentinian wine makes it incredibly food-friendly. The country's signature red wines typically possess robust tannins and a rich fruit core, which effortlessly cut through the fat and protein of premium meats, making them world-class pairings for steak and barbecue. Additionally, the crisp acidity found in high-altitude white wines cleanly cuts through rich sauces, seafood, and mildly spiced dishes.

When comparing grapes like Malbec or Cabernet Sauvignon, Argentinian versions tend to be more fruit-forward, plush, and velvety due to the abundant South American sunshine. For instance, a French Malbec from Cahors is traditionally more rustic, savoury, and heavily structured with firm tannins. In contrast, an Argentinian Malbec offers riper, darker fruit notes, softer tannins, and an approachable, opulent mouthfeel that is accessible from a younger age.

Argentina’s natural geography provides an ideal environment for low-intervention farming. The dry, semi-arid climate of wine regions like Mendoza, combined with protective mountain winds, means that vine diseases and pests are exceptionally rare. As a result, winemakers have minimal need for chemical pesticides or fungicides, allowing a large percentage of Argentinian vineyards to transition easily to certified organic, biodynamic, and sustainable practices.
