Old Tom Gin

Old Tom Gin is a historic style of gin that sits between the malty richness of Dutch genever and the dry sharpness of London Dry. Popular in 18th- and 19th-century England, it’s typically slightly sweeter than modern gins, often with added sugar or botanicals to round out the flavour. It earned the nickname “Old Tom” from wooden plaques shaped like black cats mounted outside pubs—where patrons could drop a coin and receive a shot of gin through a hidden tube during the Gin Craze. Today, Old Tom Gin has made a comeback thanks to the craft cocktail movement. It’s especially prized in classic recipes like the Martinez and Tom Collins, offering a smoother, more approachable profile than its drier cousins.
