It earned the nickname “Old Tom” from wooden plaques shaped like black cats mounted outside pubs—where patrons could drop a coin and receive a shot of gin through a hidden tube during the Gin Craze. Today, Old Tom Gin has made a comeback thanks to the craft cocktail movement. It’s especially prized in classic recipes like the Martinez and Tom Collins, offering a smoother, more approachable profile than its drier cousins.
