Marsala

Marsala is a fortified wine from the region surrounding the city of Marsala in Sicily, Italy, known for its rich, nutty flavour and versatility in both cooking and sipping. It’s made primarily from local white grape varieties such as Grillo, Inzolia, Catarratto, and Damaschino, though red grapes are used for certain styles like Rubino. The wine is fortified with grape spirit, raising its alcohol content to around 15–20% ABV, and aged using a method similar to the solera system called in perpetuum, which blends wines of different ages for complexity.

Marsala wine offers a wide spectrum of pairing possibilities depending on its style. Dry Marsala (Secco) is superb with savoury dishes like veal Marsala, mushroom risotto, aged cheeses such as Parmesan or Pecorino, and seafood like grilled swordfish or scallops. It also complements cured meats and nutty appetisers like roasted almonds. Sweet Marsala (Dolce), on the other hand, pairs beautifully with desserts including tiramisù, cannoli, panna cotta, and dark chocolate, as well as creamy cheeses like mascarpone and ricotta. Richer styles can even stand up to game meats and spiced dishes, making Marsala a versatile choice for both cooking and sipping.
