Paolo Leo Passo del Cardinale Primitivo di Manduria DOP is a bold and expressive red wine from southern Puglia. Made from Primitivo grapes, it combines rich berry fruit with subtle spice and refreshing acidity, achieving a harmonious balance between power and elegance.

Meet the Producer

Paolo Leo focuses on crafting wines that reflect the unique terroir of Puglia. By blending traditional vineyard practices with modern winemaking, the estate produces wines with intensity, freshness, and true varietal character.

Production

Grapes are destemmed and fermented at a controlled temperature of 25°C for 8–10 days. Extended maceration on the skins for 15–18 days ensures delicate extraction of tannins, colour, and flavour, enhancing the wine’s structure and aromatic profile.

Maturation

The wine is aged for three months in American oak barriques and six months in stainless steel, balancing richness and fruit purity while preserving freshness and vibrancy.

Tasting Notes

Deep ruby in colour, this Primitivo shows aromas of ripe red berries and subtle spice. The palate is full-bodied yet elegant, with smooth tannins, lively acidity, and a long, well-rounded finish.
