Pinot Noir Wines

Pinot Noir is notoriously challenging due to its fragile physical anatomy and high sensitivity to climate, soil, and viticultural management. The variety features thin skins and tight, compact grape clusters that make it exceptionally vulnerable to sunburn, fungal diseases like powdery mildew, downy mildew, and grey rot (Botrytis cinerea), as well as spring frosts. Furthermore, Pinot Noir mutates easily in the field and requires cool microclimates to ripen slowly; if the weather is too hot, it rapidly loses its delicate aromatics, drops natural acidity, and develops jammy, flabby fruit. In the cellar, its low anthocyanin content makes colour extraction difficult, and its prone to volatile acidity and oxidation if handled aggressively during fermentation.

An Old World fine Burgundy (Côte d'Or) is a medium-to-light-bodied red wine defined by high natural acidity, fine-grained, savoury tannins, moderate alcohol (12.5% to 13.5% ABV), and translucent pale ruby colour. Aromatically, it balances tart red berries (cranberry, sour cherry) with complex tertiary notes of forest floor, wet leaf litter, crushed limestone, game, and truffle. New World expressions from regions like Oregon’s Willamette Valley or New Zealand’s Central Otago benefit from higher sunshine hours. They yield slightly fuller-bodied wines with higher alcohol levels (13.5% to 14.5% ABV), suppler tannins, and ripe fruit profiles dominated by red plum, sweet black cherry, and dark raspberry, often accompanied by vibrant floral lift and integrated oak spice.

Whole-bunch fermentation—including intact grape stems in the fermenter—introduces carbonic maceration elements alongside stem tannins. This technique enhances floral top-notes of crushed violet, rose petal, black tea, and fresh herbal spice while adding structural, fine-grained tannins that give the mid-palate extra grip and longevity. For oak maturation, Pinot Noir’s delicate aromatic spectrum requires subtle handling. Winemakers typically use tight-grained French oak barrels with light to medium toast, often with a low percentage of new oak. This slow micro-oxygenation rounds the natural acidity and integrates tannins without masking primary fruit purity, imparting subtle secondary nuances of clove, nutmeg, and toasted cedar.

Pinot Noir excels at a light cellar chill of 12°C to 14°C because of its naturally low concentration of monomeric skin tannins and bright, acid-driven architecture. Unlike full-bodied, highly tannic red wines—which taste unpleasantly bitter, astringent, and harsh when chilled—Pinot Noir’s fine-grained, supple tannin structure remains silky at lower temperatures. A slight chill accentuates its vibrant tartaric acidity, making the red fruit flavours of sour cherry, redcurrant, and raspberry taste exceptionally fresh and focused while preventing alcohol warmth from disrupting its delicate floral and savoury tertiary aromatics.

Pinot Noir’s high natural acidity, light-to-medium body, and soft tannin profile make it ideal for pairing with delicate, flavoursome, and moderately fatty dishes that would be overwhelmed by full-bodied red wines. Its ultimate classic pairings include roasted poultry like duck breast with a cherry or cranberry reduction, pan-seared pheasant, and roasted chicken with herbs. Pinot Noir is also legendary alongside earthy mushroom dishes, such as wild mushroom chanterelle risotto, truffle pasta, and seared salmon or tuna steaks. Furthermore, its bright acid drive cuts cleanly through fatty pork belly, cured charcuterie, roasted lamb loin, and medium-soft cheeses like Brie, Camembert, and Comté.
