Meet the Producer

Bodegas Bhilar is a small, quality‑driven estate run by winemaker David Sampedro, known for his commitment to organic and biodynamic farming. Working exclusively with estate vineyards, he focuses on low‑intervention winemaking that highlights the unique landscapes of Rioja Alavesa. His wines are celebrated for their elegance, authenticity and sense of place.

Production

Grapes are hand‑picked from limestone‑based vineyards at elevation, where cooler temperatures preserve acidity and aromatic freshness. After a gentle whole‑bunch press, the juice ferments spontaneously with indigenous yeasts. The wine is then matured on fine lees in a mix of oak barrels and concrete, building texture and complexity while maintaining a clean, mineral‑driven profile.

Tasting Notes

Aromatic and refined, the wine opens with notes of citrus blossom, pear, white peach and subtle herbal tones. The palate is layered and silky, combining ripe stone fruit with chalky minerality and a savoury, gently nutty undertone from lees ageing.
