Because front labels rarely state the exact sugar content, you must look for specific regional terminology and alcohol percentages. For German Rieslings, look for the word Trocken, which legally guarantees the wine is bone-dry, or Halbtrocken and Feinherb, which indicate an off-dry style. If you see terms like Kabinett, Spätlese, or Auslese, the wine can range from off-dry to sweet. A brilliant trick to confirm the sweetness level is to check the Alcohol by Volume (ABV) percentage on the back label. If the alcohol level is high, between 12% and 14% ABV, the yeast has consumed all the sugar, making the wine dry. If the alcohol level is low, between 7% and 10% ABV, the fermentation was stopped early, leaving behind significant natural sweetness.
This highly distinct aroma is entirely natural and is caused by a chemical aroma compound called TDN (1,1,6-trimethyl-1,2-dihydronaphthalene). TDN is not present in the grapes initially; instead, it develops slowly over years of bottle ageing as natural precursors in the wine break down. The compound is formed in higher concentrations when the grapevines experience intense sunshine, heat, and water stress during the growing season. While a strong petrol aroma can be jarring to newcomers, wine enthusiasts highly prize this characteristic as a classic hallmark of a well-aged, premium Riesling, especially when it is beautifully balanced by vibrant notes of lime marmalade, honey, and toasted nuts.
While Germany's Mosel region is legendary for sweeter styles, Germany's Rheingau and Rheinhessen regions are globally renowned for producing powerful, intensely mineral, bone-dry Rieslings. Outside of Germany, the Alsace region in northeast France is world-famous for its dry Rieslings, which tend to be fuller-bodied, richer, and more structurally powerful than their German counterparts. In the New World, Australia's Clare Valley and Eden Valley are legendary powerhouses. The intense sunshine and cool nights of these Australian regions produce a uniquely laser-focused, bone-dry style of Riesling defined by a piercing, mouth-watering natural acidity and an unmistakable signature aroma of fresh lime juice.
Yes, Riesling is widely considered by experts to have the greatest ageing potential of any white wine in the world. Its extraordinary longevity is driven by two natural preservatives: a exceptionally high, razor-sharp natural acidity and, in some styles, residual sugar. While basic everyday white wines lose their fruit and fade after a couple of years, a premium dry Riesling can easily cellar beautifully for 10 to 20 years. Exceptional sweet expressions, such as German Beerenauslese or Trockenbeerenauslese, possess such immense structural concentration that they can continue to evolve and improve in a cellar for 50 to 100 years, developing complex notes of beeswax, dried apricots, and caramelized ginger.
Riesling is the ultimate culinary chameleon for spiced dishes because its structural components effortlessly tackle intense, complex flavours. When pairing with fiery Thai, Sichuan, or Vietnamese dishes, an off-dry Riesling is a stroke of genius. The natural residual sugar acts as a cooling shield on the tongue, coating the palate and instantly taming the painful burn of chilli heat, while the wine's lower alcohol content prevents the spices from tasting aggressively bitter or hot. Furthermore, Riesling's piercing, vibrant citrus acidity cuts straight through rich ingredients like coconut milk or peanut sauces, refreshing the palate after every single bite.
