Abtei Himmerod Riesling Spätlese is an elegant expression of Riesling from Germany’s Mosel region, grown on steep, slate-rich vineyards along the Mosel River. The combination of slate soils, steep slopes, and a cool climate gives the grapes intense minerality, bright acidity, and delicate aromatic complexity. Hand-harvested at optimal ripeness, the grapes undergo gentle fermentation in temperature-controlled stainless steel tanks to preserve the variety’s pure fruit and floral character. The result is a vibrant, refined wine with layered flavours and a long, mineral-driven finish.

Meet the producer

Abtei Himmerod is a historic vineyard estate in the Mosel, Germany, known for producing Rieslings that combine freshness, elegance, and a true reflection of their unique terroir. The estate adheres to precise vineyard management to capture the character of the slate soils and steep river slopes.

Production

Grapes are hand-picked to ensure selection of the highest quality fruit. Fermentation is carried out in stainless steel at controlled temperatures to maintain purity and freshness. After fermentation, the wine is allowed to harmonize briefly on fine lees to add subtle texture before bottling.

Tasting notes

Pale straw with green highlights, the nose shows aromas of citrus peel, green apple, white flowers, and slate minerality. On the palate, the wine is off-dry with crisp acidity, flavours of apricot and peach, and a long, clean, mineral finish.

Food match

Pairs beautifully with seafood, sushi, lightly spiced Asian cuisine, poultry, or fresh goat cheese. Best served well chilled at 8–10°C.
