  • Veuve Clicquot Demi Sec 12% 75cl
    True to the structure of Veuve Clicquot Wines, the Demi-Sec is blended largely from Pinot Noir and Pinot Meunier. The blend is completed by about a quarter of Chardonnay and 15-25% of reserve wines. I higher dosage gives it richer notes with detracting from its freshness.

    A beautiful yellow colour with deep golden glints, and fine, even mousse. An intense fragrance reminiscent of ripe fruit (candied citrus fruit, fruit liqueurs) with notes of brioche and toast. Round and mellow in the mouth, with mild acidity maintaining a pleasant silkiness.

    The practice of decanting this wine, which dates to Madam Clicquot's time, makes it even more delectable.

    Brut Premier is the embodiment of Louis Roederer style, combining all the fruitiness and freshness of youth with the vinosity of a fully mature wine. This is a structured and elegantly mature wine, with a lively attack and a smooth palate.

    Blend: 56% Pinot Noir, 34% Chardonnay and 10% Pinot Meunier, including 10% of reserve wines from three former harvests, aged in oak casks for 2-6 years.
    Maturation: an average of three years ageing on lees, plus another six months after disgorging.
    Dosage: 11-12g/L of sugar from the dosage liqueur.
    Tasting notes: a golden colour with fine bubbles and a nose of fresh fruit and hawthorn.     Carte Blanche is slightly sweet, smooth and creamy; an ideal dessert wine. A sugar dosage gives the wine a pleasant sweetness without masking its complexity and elegance.

    40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier

    Viticulture
    Roederer own over 214 hectares of vineyards from the three main growing zones in Champagne.

    The vineyards are located in the finest villages, such as Ay, Verzenay, Vervy, Avize and Cramant where the plots rank between 95% and 100% on the official classification scale for the 'crus'.

    Roederer source two thirds of their grape needs from their own vineyards, which is the largest proportion of any champagne house and enables them to have strict control over their raw materials. For example Roederer 'green harvest in July to reduce the amount of grapes and thus improve quality.

    The harvest takes place usually mid September and takes around 15 days. 600 people work in the Louis Roederer vineyards, harvesting the grapes by hand. The grapes are then transported quickly and efficiently to one of Louis Roederer's three pressing centres, which are in the heart of its vineyards.

    Wine Making
    During the blending 10% of reserve wines is added, this give Carte Blanche its extra dimension. Reserve wines are made up of the best wines from at least 3 former vintages, which are set aside to age in large oak casks in the Reserve Wine Cellar.

    After blending and the addition of the liqueur de tirage (this starts off the secondary fermentation, which creates the sparkle in champagne) the wines are left to mature for at least four years. This is in excess of the legal minimum.

    The final stages involve disgorging the wine. This is where the sediment formed by the secondary fermentation is removed to give a clear liquid. At this stage the liqueur de dosage is added. These liqueur wines are the result of a meticulous selection of wines that have been aged for six to ten years in the famous oak casks. They are added to compensate for the natural acidity of the champagne and to determine the style of the champagne. Before its addition champagne is considered extra brut and the more liqueur that is added, the sweeter the champagne will be.

    Tasting Notes
    The color is pale golden. The inclusion of oak-aged reserve wines from four to 10 years is more apparent than in the Brut quality champagnes. The reserve wines give complexity and roundness characteristic of Louis Roederer champagnes.

  • Roederer Brut Rose 2007 Champagne 12% 75cl
    In the development of its rose champagnes, Louis Roederer still uses the skin contact method leaving the black grapes to macerate in the wine press for several hours to extract the pigmenting substances from the must. To confer colour and style, Louis Roederer uses Pinot Noirs from old Cumires vines which produce very ripe grapes of exceptional aromatic depth. The ros wine is then usually left to age for a period of four years, plus an additional six months after disgorgement to ensure perfect maturity.

    Dosage: 11 to 12 grams per litre. The 'liqueur de dosage' is prepared with the greatest of care from a selected blend of 8 to 10 of the very best crus from the Louis Roederer vineyard and then left to age in oak casks.

    Tasting Notes
    Colour: Pink tones with orange, almost ochre highlights. A stream of lively, delicate bubbles.

    Nose: Rich, intense, distinctly red-fruit nose (strawberries, cherries) with sweet floral notes (white flowers) and almost a whiff of stewed fruit. The bouquet is neat, honest and precise.

    Palate: Savoury at first, with a soft, almost caressing texture that gives an impression of great finesse and precision. The mouthfeel is fabulously light, fresh and fruity the complete antithesis of the ripe, warm, dry conditions that characterized this vintage. The wine opens up within seconds to reveal all of its generous volume and substance. Flesh and freshness combine to produce a vinosity that lingers eternally on the finish. An irresistibly airy Champagne.

    Food Matching
    An excellent accompaniment to fish or meats such as lamb, veal, guinea-fowl or even pheasant.
