Let it Bee Verdejo is a vibrant and expressive white wine crafted from organically grown Verdejo grapes in the heart of Spain’s Rueda region. The vineyards are nestled on high-altitude plains with gravelly soils and excellent drainage, allowing the vines to thrive under the region’s intense sunlight and cool nights. This unique terroir imparts the wine with crisp acidity, aromatic intensity, and a signature freshness. Fermented in stainless steel tanks to preserve varietal purity, the wine is bottled young to capture its lively character and zesty charm.

Let it Bee is a sustainability-focused project committed to organic viticulture and biodiversity. The winery champions low-intervention winemaking and supports bee conservation, integrating pollinator-friendly practices throughout its vineyards.

Production

Grapes are harvested in the early morning to retain freshness and prevent oxidation. After gentle pressing, the juice undergoes cool fermentation in stainless steel tanks to preserve the grape’s natural aromatics. No oak is used, allowing the purity of the Verdejo to shine through.

Tasting notes

Pale straw in colour with greenish hues. The nose bursts with citrus zest, green apple, and hints of fennel and white flowers. On the palate, it’s crisp and refreshing, with bright acidity, subtle herbal notes, and a clean, mineral-driven finish.
