Meet the Producer

Paolo Leo focuses on producing wines that express the distinctive terroir of Salento. Using careful vineyard management and traditional winemaking techniques, the estate achieves wines that are aromatic, structured, and harmonious.

Production

Grapes are carefully destemmed and crushed. Fermentation takes place at a controlled temperature of 22–24°C for 8–10 days, allowing for optimal extraction of colour, aroma, and flavour while maintaining elegance and balance. The wine is matured for three months in French oak barrels, enhancing structure and adding subtle complexity without overpowering the fruit.

Intense ruby with purple tinges, the wine presents aromas of ripe red berries, plum, and spice. The palate is full-bodied yet harmonious, with lively tannins and a smooth, lingering finish.
