Volcanic soil is a defining element of premium Greek viticulture, most famously on the island of Santorini. This unique, ash-rich terrain contains no organic matter, which naturally protects the vineyards from pests and forces the ancient, un-grafted vines to dig deep into the earth for nutrients. Grapes grown in these volcanic soils develop a highly distinct, crystalline mineral tension, often giving the finished wine a famous liquid-flint or smoky character that cannot be replicated anywhere else in the world.
