Greece boasts an incredible wealth of ancient indigenous varieties, but three lead the premium market. Assyrtiko is the undisputed star, famous for its high acidity and intense mineral core. Moschofilero offers a completely different experience, harvested in the cool Peloponnese region to produce highly aromatic, crisp wines packed with exotic notes of rose petal, violet, and citrus. Meanwhile, Malagousia is a grape that was nearly extinct before being saved by pioneering winemakers, prized today for its beautifully textured, medium-bodied profile featuring aromas of jasmine, white peach, and fresh herbs.
The remarkable character of Santorini Assyrtiko is shaped by some of the most extreme vineyard conditions in the world. The island features ancient, phylloxera-free vines grown on harsh, dark volcanic soils made of ash, pumice, and lava. To protect the grapes from fierce Aegean winds and scorching sun, winemakers weave the vines close to the ground into unique, basket-shaped crowns called kouloura. The combination of water-stressed volcanic terroir and constant sea-salt mist deposits a stunning, laser-focused minerality, a fiery natural acidity, and a crisp salinity into the grapes that is entirely unmistakable.
Retsina is a historic Greek wine style that has been produced for thousands of years, traditionally flavored by adding small amounts of Aleppo pine resin to the fermenting white wine juice. While it previously suffered a poor reputation due to cheap, over-resined commercial versions that tasted aggressively of turpentine, contemporary Retsina has undergone a spectacular quality revolution. Modern artisanal winemakers use high-quality grapes like Assyrtiko and Roditis, adding just a delicate whisper of premium resin. The resulting wines are beautifully balanced, offering a crisp, refreshing palate where subtle notes of pine needle, rosemary, and eucalyptus enhance rather than overpower the bright citrus fruit.
The vast majority of Greek white wines exported today are vinified to be bone-dry, showing off their refreshing, high-acid structure. However, Greece is also home to one of the world's most legendary traditional sweet wines: Vinsanto. Crafted on the island of Santorini, this luscious dessert wine is made by drying late-harvest Assyrtiko grapes under the intense Mediterranean sun for up to two weeks. The sun-drying process concentrates the sugars before the wine is aged in oak barrels for years, creating a deeply amber, syrupy nectar that reveals complex layers of dried figs, raisins, coffee, and dark chocolate, perfectly balanced by Assyrtiko's naturally high acidity.
The sharp, mouth-watering acidity and coastal salinity of Greek white wines make them peerless companions for fresh, simple Mediterranean cuisine. A crisp Assyrtiko acts exactly like a fresh squeeze of lemon, pairing magnificently with raw oysters, grilled octopus, sea bass, and fritto misto. A glass of aromatic Moschofilero or textured Malagousia is the absolute ultimate match for traditional Greek meze, including salty feta cheese, spanakopita, tzatziki, and vine leaves. Additionally, these wines possess the clean structure required to cut through the rich oils of roasted lamb or dishes heavy with garlic, capers, and wild herbs.
