Gaia Wines is one of the pioneers of the modern Greek wine revolution. Founded in 1994 by Leon Karatsalos and Yiannis Paraskevopoulos, the estate operates in Nemea and Santorini, producing cutting-edge wines that showcase the potential of indigenous Greek grape varieties.
Vineyard
The Assyrtiko vineyard in Santorini is planted with 80-year-old, self-rooted vines in volcanic soils rich in minerals. The vines are trained in traditional basket-shaped systems called kouloura. The unique microclimate, with strong summer winds, sea mists, long sunshine hours, and minimal rainfall, combined with volcanic, sandy soils, gives the wine its distinctive minerality and saline character.
Winemaking
Grapes are hand-picked, destemmed, crushed, and cold-soaked for 12 hours at 10°C. Fermentation is entirely natural using indigenous yeasts, with 45% in stainless steel, 45% in wooden casks (French oak, American oak, acacia), and 10% in ceramic vats. The wine is aged on fine lees for four to six months with bâtonnage, resulting in a complex, layered wine that expresses both wild ferment character and elegant precision.
Tasting Notes
Aromatic and intricate, with citrus and floral notes, touches of vanilla and toast, and a smoky undertone. The palate is precise, dry, and layered, with almond and acacia complexity, oak-wreathed minerality, and a saline finish.
