Assyrtiko originates on the volcanic island of Santorini, Greece, where ancient vines grow in basket shaped kouloura systems. It is now planted across Greece including Macedonia, Crete, and the Cyclades, and is gaining popularity internationally.
Assyrtiko typically shows lemon, lime, grapefruit, saline notes, and strong minerality with high acidity. Santorini Assyrtiko is known for its volcanic intensity, while styles from Macedonia and Crete can be fruitier and softer.
Most Assyrtiko wines are dry, especially those from Santorini, but the island also produces Vinsanto, a naturally sweet sun dried wine made from Assyrtiko, Aidani, and other local grapes.
Assyrtiko pairs perfectly with Mediterranean seafood, grilled octopus, oysters, lemon chicken, Greek salads, and dishes featuring olive oil and herbs. Its acidity and minerality make it ideal for coastal cuisine.
