Viña Cobos works with vineyards in Luján de Cuyo, Maipú and the Uco Valley, ranging from 2300 to 3835 feet above sea level. These high altitude sites experience dramatic temperature shifts between day and night, which slow ripening and preserve natural acidity. The long growing season and semi desert conditions create fruit with exceptional concentration and purity. Irrigation is essential in this environment, and yields are kept low to maintain intensity, typically around 3.2 tons per hectare. These conditions form the foundation of the winery’s distinctive style.

Paul Hobbs approached Mendoza with curiosity and a desire to understand its soils and microclimates. The wines are bottled without fining or filtration to preserve texture, depth and a persistent finish. Organic principles guide vineyard management. Waste is composted, organic fertilisers are used and inter row grasses help fix nitrogen in the soil. Solar energy supports the winery, and proceeds from recycled materials fund nutrition programmes and local community initiatives.
