Paul Hobbs first visited Mendoza in 1989, crossing the Andes from Chile and instantly captivated by the region, its people, and its potential for producing world-class wines. He began experimenting with wild-fermented Chardonnay and Malbec, the grape that would later define Argentine wine. In 1999, he established Viña Cobos, focusing on authentic expressions of terroir across Mendoza’s distinguished Luján de Cuyo and Valle de Uco regions. Today, the winery produces elegant, balanced wines, the result of meticulous vineyard management and a profound respect for the land.
Viticulture
The grapes are sourced from vineyards in Valle de Uco and Luján de Cuyo, situated at altitudes between 2,306 and 3,927 feet. The semi-desert climate contributes to concentrated fruit and distinctive character.
Winemaking
Fermentation takes place in 8- and 17-ton closed-top stainless steel tanks, using a combination of selected and native yeasts. The wine is then aged in French oak barrels to add structure and complexity.
Tasting Note
This Cabernet Sauvignon displays a deep ruby colour with dark tones, accompanied by aromas of red pepper, fresh red fruits, and hints of white pepper. The palate is textured, balanced, and supported by fantastically chewy tannins, leading to a satisfying, long finish.
Food Matching
Pairs beautifully with semi-hard cheeses, pasta with tomato sauce such as meatballs, lasagne, and skirt steak.
