The explosive aroma and piercing flavour intensity of New Zealand Sauvignon Blanc are driven by the country's unique geography and intense sunlight. New Zealand vineyards benefit from an exceptionally maritime climate combined with high levels of ultraviolet light due to the clean southern skies. The vast majority of New Zealand Sauvignon Blancs are intentionally crafted to capture vibrant fruit purity and immediate, youthful freshness. To experience these punchy tropical and citrus flavours at their absolute peak, the wine should ideally be consumed within one to two years of its vintage date. Storing a standard bottle for longer will cause those distinctive herbaceous and gooseberry aromas to fade, replaced by flatter, more vegetal tones of canned peas or asparagus. However, select premium, wild-fermented, or oak-aged styles from top producers possess the structure to cellar beautifully for three to five years, developing a complex, nutty maturity.
