The skins contain dense concentrations of anthocyanins for deep ruby-purple pigment and monomeric condensed tannins for firm structural grip. Furthermore, the grape retains high levels of natural tartaric acid and thick seed phenolics. This combination of robust tannic architecture, deep colour compounds, and elevated natural acidity provides a protective chemical matrix against oxidation, allowing fine Cabernet Sauvignon to mature, soften, and gain tertiary complexity over several decades in bottle.
An Old World Bordeaux-style Cabernet Sauvignon from maritime appellations like Pauillac or Margaux is typically medium-to-full-bodied with moderate alcohol levels (13% to 13.5% ABV), higher natural acidity, and structured, savory tannins. Aromatic profiles lean towards tart cassis, graphite, dried herbs, cedar, and earthy pencil shavings. Conversely, New World expressions from warm regions like Napa Valley, Coonawarra, or Margaret River produce full-bodied red wines with elevated alcohol levels (14.5%+ ABV), lower perceived acidity, and plush, fine-grained tannins. These wines showcase opulent, fruit-forward notes of sweet blackcurrant, dark plum jam, mint, chocolate, and rich oak spice.
Oak maturation plays a crucial role in rounding Cabernet Sauvignon's firm tannins through micro-oxygenation while contributing complex secondary aromatics. French oak casks (Quercus petraea), featuring a tight wood grain, release subtle ellagitannins into the wine, imparting sophisticated notes of dark chocolate, toasted espresso, clove, nutmeg, cedar wood, and graphite that integrate cleanly with cool-climate fruit profiles. In contrast, American oak barrels (Quercus alba) possess a wider wood grain that rapidly diffuses lactones and vanillin into the liquid, infusing Cabernet Sauvignon with sweeter, pronounced aromatics of vanilla bean, coconut, sweet baking spice, and mocha that soften aggressive young tannins.
Although Cabernet Sauvignon provides strong tannic structure, high acidity, and intense cassis fruit, it can sometimes feel hollow on the mid-palate or overly stern in its youth. Blending with complementary varieties creates a balanced, complete structural profile. Merlot is added to supply mid-palate flesh, rounded alcohol, and juicy dark fruit that softens Cabernet’s astringent edge.
