French wine law prioritizes geography over grape variety, meaning bottles are labelled by their appellation (the region where the grapes were grown) rather than the vine type. To identify the grape, consumers look to regional tradition. For example, a white Burgundy is always Chardonnay, a Sancerre or Pouilly-Fumé is always Sauvignon Blanc, and a Vouvray is always Chenin Blanc. By understanding the signature grape of each designated French region, it becomes easy to decode exactly what is inside the bottle.
The difference comes down to the grape varieties used and the resulting structure of the wine. A white Burgundy is made exclusively from Chardonnay, typically offering a single-varietal focus that ranges from the lean, steely, and mineral-driven style of Chablis to the rich, buttery, and oak-aged elegance of Meursault. A white Bordeaux is a masterfully orchestrated blend of Sauvignon Blanc and Semillon. This combination creates a different dynamic, where the Sauvignon Blanc provides a vibrant, zesty acidity and grassy freshness, while the Semillon introduces a rich, oily texture, honeyed depth, and excellent ageing potential.
The term sur lie translates directly to "on the lees" and describes a traditional winemaking process where the wine is left to mature on the dead yeast cells sediment after fermentation is complete. Rather than filtering the wine immediately, winemakers leave it in contact with these sediment cells for several months, often stirring them gently. This technique imparts a beautiful, creamy texture to the liquid, introduces complex notes of freshly baked brioche and nuts, and adds a delicate, natural effervescence that keeps the wine tasting remarkably fresh.
Whilst France is globally famous for its bone-dry white wines, it also produces some of the most prestigious sweet and off-dry styles in the world. In the Loire Valley, appellations like Vouvray and Coteaux du Layon harvest Chenin Blanc late in the season to create beautifully balanced, off-dry and sweet bottles. For the ultimate luxury in dessert wines, Bordeaux boasts the Sauternes appellation, where Semillon and Sauvignon Blanc grapes are affected by noble rot, concentrating the sugars to create a luscious, golden nectar balanced by a vibrant, life-giving acidity.
Traditional French white wines are deeply tied to the culinary heritage of their respective regions. A crisp, flinty Chablis or Sancerre features a razor-sharp acidity that acts like a squeeze of lemon, making it the perfect partner for raw oysters, fresh seafood, and goat's cheese. For a rich, barrel-fermented white Burgundy, heavier dishes like roasted chicken in a cream sauce, grilled lobster, or buttery sea bass are ideal. Meanwhile, a glass of sweet Sauternes provides the ultimate gourmet match when paired with rich duck liver pâté or pungent blue cheeses like Roquefort.
