San Marzano Timo is a vibrant and aromatic Vermentino from the sun-drenched vineyards of Salento, Puglia. Exotic floral and citrus aromas, combined with hints of thyme, rosemary and green apple, create a refreshing and mineral-driven white wine. The coastal influence and saline, zesty finish make it a distinctive expression of Puglia's terroir, with the wine's name inspired by the wild thyme bushes that line the Ionian coastline.

Meet the Producer

Established in 1962, Cantine San Marzano was founded by 19 vine growers whose families had cultivated the land for generations. Today, the cooperative has grown to include over 1,200 high-quality growers, producing wines that blend time-honoured Apulian traditions with modern winemaking techniques. In 2022, San Marzano was awarded Cooperative Winery of the Year by Gambero Rosso.

Vineyard

The Vermentino grapes are grown in Brindisi, Salento, at approximately 100 metres above sea level. The warm climate is tempered by sea breezes, while vines are double Guyot trained at a density of 5,000 per hectare and cultivated in shallow, medium-textured sandy soils. Cover crops and green manure maintain soil health, and an integrated protection system monitors vineyard conditions, applying targeted treatments only when necessary.

Winemaking

Grapes are destemmed and allowed brief skin contact at low temperatures to extract delicate floral aromas. Gentle pressing follows, and fermentation occurs in stainless steel tanks with selected yeasts at 15 degrees Celsius for 13 to 15 days. The wine then matures in stainless steel for five months to preserve freshness, varietal purity and elegant mineral character.

Exotic white floral and citrus aromas enhanced by herbal notes of thyme and rosemary. The palate is refreshing, mineral and elegantly structured, finishing with a saline, zesty lift that reflects the wine's coastal origins.
