Vineyard & Production

The grapes are grown in Brindisi, Salento, where vines are rooted in shallow, sandy soils just 100 metres above sea level, benefiting from warm sunshine tempered by regular sea breezes. Following a careful harvest, the fruit is destemmed and given a brief cold skin soak to extract delicate aromas. A gentle pressing follows, with fermentation taking place in stainless steel tanks at a cool 15 degrees Celsius. The wine is then matured entirely in stainless steel for five months, preserving its pristine freshness, varietal purity, and elegant mineral edge.
