Saperavi originates in Georgia and is most famously grown in Kakheti, particularly in regions such as Telavi and Kvareli. It is one of Georgia’s oldest and most important red grape varieties.
Saperavi typically shows blackberry, black cherry, plum, spice, earth, and smoky notes with high acidity and firm tannins. Qvevri aged wines are more rustic and structured, while European style versions can be smoother and fruit driven.
Saperavi is a teinturier grape, meaning both its skin and flesh are red. This gives the wine naturally deep colour and intense structure. It also performs well in both traditional qvevri and modern winemaking styles.
Saperavi pairs well with grilled meats, lamb, barbecue, stews, mushrooms, and hearty Georgian dishes such as khinkali and kharcho. Its acidity and tannins make it ideal for rich, flavourful cuisine.
