To identify the style of a Hungarian wine, consumers should look for key traditional terms on the label. The word Száraz indicates that the wine is completely dry, whilst Félszáraz signifies an off-dry or medium-dry style. If a bottle is semi-sweet, it will feature the word Félédes. For the ultimate sweet dessert styles, the label will prominently display terms like Aszú or Szamorodni, which are traditional indicators of late-harvest, botrytised winemaking.
Bikavér, famously translated as Bull's Blood, is a historic, deeply coloured Hungarian red wine blend produced in the Eger and Szekszárd regions. In the late 20th century, mass production led to a decline in quality, giving the name a reputation for being cheap and rustic. However, a modern quality revolution has completely transformed the style. Today, strict regional laws dictate that modern Bikavér must be a premium, carefully crafted blend led by the elegant, peppery Kékfrankos grape, resulting in a complex, food-friendly wine with vibrant acidity and refined tannins.
The legendary sweet wines of Tokaj earned the title "Wine of Kings, King of Wines" after King Louis XIV of France famously bestowed the compliment upon receiving a gift of the golden liquid in the 18th century. Tokaji Aszú was subsequently served at royal courts across Europe, from Versailles to St. Petersburg. Its royal reputation is matched by its painstaking production method, where individual, shrivelled, noble-rot grapes are hand-picked to create an ultra-luxurious nectar celebrated for its perfect balance of intense sweetness and piercing, refreshing acidity.
Traditional Hungarian recipes pair perfectly with the country's native wines. A rich, slow-cooked Hungarian goulash seasoned with sweet, smoky paprika demands a red wine with excellent structure and vibrant acidity to cut through the meat's texture. A premium, modern Bikavér or a single-varietal Kékfrankos provides the ideal match, offering bright red-fruit flavours and a peppery spice that elevates the dish. For those who prefer a white wine, a dry, full-bodied Furmint from the volcanic soils of Tokaj has the weight, concentration, and fiery acidity to stand up to the hearty stew perfectly.
