Vallone Tenuta Serranova Appassimento is a rich, characterful red from Puglia, crafted by Agricole Vallone at their historic Tenuta Serranova estate in Salento using the traditional appassimento method. Made from 100% Negroamaro, this is southern Italian winemaking at its most generous and expressive.

Agricole Vallone has been one of Salento's most respected estates since 1935, and Tenuta Serranova is also home to the legendary Graticciaia. Their approach to appassimento is unhurried and precise: grapes are late harvested and naturally dried on the vine to intensify sugars and flavours, resulting in a wine of real concentration and depth. At 15% ABV, this is a wine that commands attention, yet fresh acidity keeps it balanced and far from heavy.

Vineyard and Production

Negroamaro grapes are grown in clay and limestone soils just 3km from the Adriatic Sea, where the maritime influence tempers the heat of the Salento sun. After the appassimento drying process, the grapes are gently pressed and fermented before ageing in concrete tanks for 8 to 10 months, followed by 3 to 4 months in bottle to enhance structure and integration.

Tasting Notes

Intense aromas of ripe black fruit, mocha, and spice lead the nose. The palate is generous and layered, with flavours of black cherry, bramble, dried fruit, and coffee, supported by fresh acidity that balances the natural richness. Full-bodied, velvety, and mouth-filling.
