Vineyard & Production

The fruit thrives in low-yielding vineyards situated about 100 metres above sea level in the heart of Salento, where high summer temperatures are moderated by refreshing sea breezes. The vines are rooted in thin, rocky clay soils that provide exceptional natural drainage, forcing the roots deep and concentrating the varietal flavours. Following an early morning harvest to preserve freshness, the grapes undergo a brief, controlled skin maceration for a few hours before a gentle pressing. Fermentation and ageing take place entirely in temperature-controlled stainless steel vats to retain the pristine, unadorned purity of the fruit.
