Founded in 1962 by 19 vine growers from San Marzano, Cantine San Marzano has grown into one of Apulia’s most respected cooperatives, now comprising over 1,200 growers. Combining centuries-old family traditions with modern winemaking technologies, the winery produces elegant wines that reflect the unique terroir of southern Italy. San Marzano was awarded ‘Cooperative Winery of the Year’ by Gambero Rosso, recognising its commitment to quality and innovation.

Vineyard
The grapes are sourced from Contrada di Monte la Conca at 100 metres above sea level. The vineyard benefits from a Mediterranean climate with high temperatures, low rainfall, and a wide diurnal temperature range, producing concentrated fruit with balanced ripeness. Soils are loamy with calcareous limestone subsoil and scattered rocks, enriched with iron oxide giving the iconic red hue. Vines are Alberello trained (traditional head-trained bush vines), ensuring low yields, intense phenolic concentration, and excellent fruit quality. Sea breezes and sustainable water management practices, including emergency irrigation when needed, maintain vine health. Hand-harvesting selects slightly overripe grapes to enhance richness and complexity.

Winemaking
Grapes are destemmed and gently crushed before cold-soak maceration at 8°C for 24–48 hours. Fermentation occurs in stainless steel tanks with selected yeasts at controlled temperatures of 22–24°C for approximately ten days. The wine undergoes malolactic conversion to soften the palate and is aged for 12 months in 225-litre French and Caucasian oak barrels, enhancing texture, depth, and aromatic complexity.

Tasting Notes
A powerful and velvety Negroamaro with a rich bouquet of violet and sweet plummy fruit. Layers of cocoa, tobacco, and liquorice complement the concentrated palate, leading to a long, elegant, and balanced finish.
