Vineyard & Production

Harvest takes place in the cool of early morning, with Sauvignon Blanc picked earlier than Rolle to preserve its crisp acidity. Both varieties undergo cold maceration, gentle pressing, and fermentation on fine lees at 16–18°C — a process that highlights the creamy texture of Rolle and the zingy freshness of Sauvignon Blanc in equal measure.
