Vineyard and Production

Corvina, Corvinone, and Rondinella grapes are sourced from hillside vineyards north of Verona. After harvest, the grapes undergo appassimento, the traditional drying technique of the Veneto, for 30 days before vinification. This process concentrates sugars and flavours, lending the wine its signature richness and supple texture. Following fermentation, the wine is aged for 6 months in oak, striking a fine balance between fruit expression and gentle complexity.

Tasting Notes

Bright aromas of red berries, ripe black cherries, and a touch of sweet spice on the nose. The palate reveals fresh cherry and bramble fruit typical of Valpolicella, enriched with the extra weight and roundness of the appassimento process. Soft, supple tannins carry through to a finish of delicate sweetness balanced by fresh acidity, leaving the wine both smooth and thoroughly moreish.
