Founded in the late 19th century, Domaine de la Baume is located between Béziers and Pézenas in the heart of the Languedoc. The estate has built a reputation for producing varietal wines that express both the richness of the terroir and the precision of modern winemaking techniques.

Production

Grapes are harvested at optimal ripeness during the cool hours of early morning to preserve aromatic freshness. After gentle pressing, the juice undergoes cold settling before fermentation in temperature-controlled stainless steel tanks to retain the delicate floral and stone fruit aromas characteristic of Viognier. A short maturation on fine lees adds roundness and texture to the palate.

Brilliant pale gold in colour, the nose is bursting with apricot, peach, and honeysuckle, complemented by subtle citrus zest and a hint of exotic fruit. The palate is rich yet fresh, with a silky texture and vibrant acidity balancing the generous fruit. The finish is long and perfumed, with lingering notes of apricot and orange blossom.
