Vineyard & Production

The grapes are hand-harvested from mature, dry-farmed bush vine blocks carefully selected for their low yields and exceptional concentration. Upon arrival at the cellar, the bunches are destemmed and gently crushed into open-top fermentation vats. Fermentation takes place with regular, controlled pump-overs and manual punch-downs to extract deep ruby colour and soft, ripe tannins. Following pressing, the wine is transferred entirely to new French oak barrels, where it undergoes malolactic fermentation and matures for eighteen to twenty-four months before final barrel selection and bottling.
