Vineyard and Production
Sourced exclusively from Astobiza’s single vineyard in Okondo at around 250 metres above sea level, the wine reflects a cool Atlantic climate moderated by surrounding mountains. Clay‑based soils with limestone, slate and marl provide structure and minerality, while micro‑plots are managed individually for precision. Grapes are harvested by hand at optimal ripeness, with sustainable, biodiversity‑focused viticulture guiding every decision. Winemaking begins with cold maceration to enhance aromatics, followed by gentle pressing and temperature‑controlled fermentation. Ageing on fine lees for several months adds texture and depth, before careful clarification and filtration ensure purity and stability.
