Pedro Ximénez typically shows flavours of raisin, fig, date, toffee and molasses with notes of coffee, chocolate and spice. It has extremely high sweetness and a velvety texture, giving it a rich and indulgent profile. Aged versions develop deep complexity with nutty and caramelised notes.
Pedro Ximénez is primarily grown in southern Spain, especially in Andalusia in the Montilla Moriles and Jerez regions. The hot climate helps the grapes reach high sugar levels. Smaller plantings also exist in the Canary Islands and parts of South America.
Pedro Ximénez is best known for its intensely sweet Sherry made from sun dried grapes, but the variety can also produce dry table wines. These dry styles are far less common and tend to be light, subtle and gently aromatic compared with the famous dessert wines.
Pedro Ximénez pairs well with chocolate desserts, ice cream, blue cheese, sticky toffee pudding and rich pastries. Its sweetness and depth also complement roasted nuts and dishes with caramel or coffee flavours. It can be drizzled over desserts for extra richness.
Pedro Ximénez is used to produce intensely sweet Sherry, aged dessert wines, blends for cream Sherry and occasional dry table wines. The classic style involves sun drying the grapes to concentrate sugars, creating one of the world’s richest and sweetest wine expressions.
