It holds the distinction of being the first pastis ever made in the UK, and it reflects both traditional anise‑led structure and the distillery’s signature coastal character.

The palate opens with clean anise and fennel, followed by layers of fresh gorse blossom, wild herbs, green spice and a gentle maritime note that hints at its coastal origin. Compared with French pastis, it leans slightly drier and more botanical, with a subtle floral lift and a crisp, refreshing finish. When diluted with cold water, it turns a soft, cloudy louche and releases a more expansive bouquet of herbs and spice.
