Winemaking

This red wine is made from Cabernet Franc and Malbec grapes that are hand-picked in Franschhoek and Paarl. Fermentation is carried out naturally using whole bunches and whole berries, with no crushing, and minimal intervention to emphasise terroir over grape variety. After fermentation, the wine is aged for 20 months in a combination of new and seasoned French and Austrian oak barrels to develop depth and complexity.
