Made only when a specific vineyard block yields something truly extraordinary, this bottling represents only the third wine ever released under the flagship Waterkloof label. Crafted by winemaker Nadia Langenegger, it expresses the cool-climate purity, natural restraint, and distinct coastal terroir of this biodynamic, ocean-facing estate.

Sourced from a single, south-facing granite plot just five kilometres from the Atlantic Ocean, it undergoes traditional foot-treading and whole-bunch wild-yeast fermentation in open-top French oak foudres. Aged for 30 months in large, seasoned oak barrels, it offers a supple, plush mouthfeel structured with fine tannins that ensure it is built to age gracefully.

Vineyard & Production

The grapes are hand-picked and hand-sorted from a single, south-facing Syrah block planted on granite soils fully exposed to cooling ocean breezes. In the gravitational cellar, the whole bunches undergo spontaneous fermentation using wild yeasts in old, open-top French oak foudres. The team utilizes gentle foot-treading and manual punch-downs across 20 wooden fermenters to gently extract juice and fine-grained tannins. Following fermentation, the wine matures for 30 months in old 600-litre French oak barrels before bottling with no additions other than minimal sulphur.

Tasting Notes

In the glass, it reveals a deep ruby-purple hue. The nose is lifted and highly expressive, offering intense aromas of crushed red berries, fresh plum, and blackberry intertwined with black pepper, dried Mediterranean herbs, and subtle smoky undertones. On the palate, it is full, fleshy, and broad, displaying layered dark fruit supported by fresh acidity and fine, well-integrated tannins. It concludes with a long, savoury, and beautifully textured finish.
