Vineyard & Winemaking

Produced by Waterkloof Estate in Stellenbosch, South Africa. Vineyards are positioned high above False Bay on the upper slopes of Schaapenberg Mountain, facing the Atlantic Ocean. The estate follows biodynamic practices. Grapes are picked early in the morning when cool to preserve flavours. Bordeaux varietals are generally destemmed and Rhône varietals are fermented as whole bunches depending on stem ripeness. All red wines are fermented in open-top wooden fermenters with punchdowns twice a day maximum. The wine stays on the skins for 30-40 days before being pressed. All wines are fermented naturally without the addition of cultivated yeast.
