Villa Noria Les Colombiers Chardonnay is a rich and expressive white wine from the Pays d’Oc region in southern France, crafted to showcase the elegance and texture of Chardonnay grown at the foot of a volcanic hillside.

The grapes for this wine are sourced from a single vineyard named Les Colombiers, where the vines benefit from mineral-rich soils and a Mediterranean climate. The combination of warm days and cool nights allows for slow ripening, resulting in fruit with excellent balance and aromatic depth. The vineyard’s location and sustainable viticulture practices contribute to the wine’s purity and sense of place.

Winemaking

Traditional vinification techniques are employed to preserve freshness and enhance complexity. A portion of the wine undergoes thermovinification to extract vibrant fruit character, while another part sees short maceration to build texture. Around half of the wine is aged in French oak, adding subtle layers of toast and spice without overpowering the varietal expression.

Villa Noria Les Colombiers Chardonnay 2023 pours a pale gold with green highlights. The nose is inviting, with aromas of apricot, white peach, and quince jelly, complemented by hints of fresh salted butter, vanilla, and toasted brioche. On the palate, it is full-bodied and structured, offering flavours of stone fruit, citrus zest, and a touch of coffee and spice. The acidity is well-integrated, providing lift and balance, while the finish is long and savoury, developing beautifully in the glass.

Food Pairing

Pairs wonderfully with grilled sea bass in lemon butter, roasted chicken with herbs de Provence, goat’s cheese salad with honey vinaigrette, and coconut curry prawns. Its richness and complexity also make it a strong companion to creamy pasta dishes and soft cheeses.
