St Ives Brewery Knill West Coast DIPA builds on the legacy of one of the brewery’s earliest creations, Knill by Mouth, first brewed in 2010. This modern interpretation takes the original idea and amplifies it, creating a hybrid that respects classic West Coast roots while embracing a sharper, more contemporary execution. The flavour profile is driven by a full line‑up of oil‑rich hops beginning with the letter C, delivering the pine, citrus and resin that define the style. It opens with bright grapefruit peel and pine needles, followed by deeper resinous notes and a firm, purposeful bitterness that builds throughout. The malt character remains lean and supportive, offering a rich amber backdrop that lets the hops dominate without heaviness. The finish is crisp, dry and satisfyingly bitter, leaving a lingering snap of citrus and pine that encourages another sip.
