From the cool, coastal pre-littoral plains of Chile’s Casablanca Valley comes Signos de Origen La Vinilla Chardonnay Roussanne, a wine that showcases Emiliana’s mastery of organic and biodynamic viticulture. The valley’s maritime breezes moderate summer temperatures, allowing grapes to ripen slowly and develop exceptional aromatic intensity and expressive flavour. Hand-harvested from small, meticulously cared-for blocks, the Chardonnay and Roussanne grapes are treated gently to preserve their delicate characters. The combination of native yeast fermentation across French barrels, concrete ovoids, foudres, and stainless steel, along with extended lees ageing, gives the wine remarkable weight, texture, and a seamless integration of freshness and complexity. This is a white of both power and elegance, reflecting Emiliana’s philosophy of producing wines with personality, precision, and a true sense of place.

Meet the producer
Emiliana is one of Chile's most exciting producers and pioneers in organic and biodynamic winemaking. Since 1998, this estate has led the way in sustainable viticulture while producing wines of exceptional quality and expression.

Production
The grapes come from blocks of particularly high quality fruit in Casablanca. After manual harvest and careful selection on a sorting table, bunches are pressed whole in a pneumatic press. The must is kept cold on its lees for six days before spontaneous fermentation with native yeasts in barrels, foudres, and concrete ovoid tanks. After fermentation, the wine remains on its lees in the same vessels for nine months: 60% in French barrels, 16% in 2,000-liter French foudres, 15% in concrete ovoids, and 9% in stainless steel, before final blending and bottling.

Tasting notes
Aromas of cold salted butter and subtle white pepper lead into a generous, textured palate with notes of almond skin, vanilla, crème fraîche, and salted butter. A seam of saline minerality runs through the long, refined finish.

Food match
Pairs beautifully with fine hard cheeses or a perfectly roasted chicken. Also ideal with a classic poulette if available.
