Proverbio Prosecco DOC Extra Dry is a lively and elegant sparkling wine from the Veneto region. With fine, persistent bubbles and a classic Prosecco aromatic profile, it is soft on the palate, offering refreshing acidity and vibrant fruity flavours of apple, apricot, and subtle banana.

Meet the Producer

Winemaker Stefano Chioccioli crafts Proverbio to express the gentle hills and fertile soils of Treviso. Focused on careful vineyard management and precise winemaking, the winery produces wines that combine freshness, aromatic intensity, and elegance.

Production

Glera grapes are gently destemmed and pressed in a pneumatic press. The juice is chilled to allow natural sedimentation before fermentation. Fermentation occurs in stainless steel tanks at controlled temperatures below 18°C, using selected yeasts and organic brown sugar. After 30–40 days, once the desired pressure and sugar level are achieved, fermentation is stopped. The wine is then filtered and bottled.

Maturation

Matured entirely in stainless steel tanks to preserve freshness, fruit intensity, and aromatic purity.

Tasting Notes

Pale straw in colour, this Prosecco displays delicate floral and fruity aromas with notes of apple, apricot, and banana. The palate is soft, refreshing, and lightly textured, finishing clean with vibrant acidity.
