The grapes are gently pressed and fermented at controlled temperatures below 18°C in stainless steel tanks, using selected yeasts and organic brown sugar. After 30–40 days, once the desired pressure and sugar level are achieved, the wine is simply filtered and bottled. Winemaker Stefano Chioccioli sources Glera grapes from gentle hillside slopes in the Treviso province at 250 metres altitude, creating an authentic, organic Prosecco with fine bubbles and vibrant fruit character at exceptional value.

Winemaker Stefano Chioccioli crafts Proverbio to express the gentle hills and fertile soils of Treviso. Focused on careful vineyard management and precise winemaking, the winery produces wines that combine freshness, aromatic intensity, and elegance.

Production

Glera grapes are gently destemmed and pressed in a pneumatic press. The juice is chilled to allow natural sedimentation before fermentation. Fermentation occurs in stainless steel tanks at controlled temperatures below 18°C, using selected yeasts and organic brown sugar. After 30–40 days, once the desired pressure and sugar level are achieved, fermentation is stopped. The wine is then filtered and bottled. Matured entirely in stainless steel tanks to preserve freshness, fruit intensity, and aromatic purity.

Tasting Notes

Pale straw in colour, this Prosecco displays delicate floral and fruity aromas with notes of apple, apricot, and banana. The palate is soft, refreshing, and lightly textured, finishing clean with vibrant acidity.

Perfect as an everyday sparkling wine or aperitif. Pairs especially well with oriental cuisine, light seafood dishes, and fish. Also excellent with light appetizers.
