Vineyard & Production

Sourced from 15–20-year-old espalier-trained vines harvested at the end of August. Fermentation takes place off the skins under controlled temperatures (15°C), followed by ageing in stainless steel to preserve the wine's aromatic intensity, minerality, and natural freshness before bottling.

Tasting Notes

Delicate aromas of hawthorn and acacia on the nose, with notes of cedar, yellow grapefruit, and subtle mineral and saline nuances. The palate is fresh, savoury, and beautifully balanced, finishing with citrusy brightness and lingering floral notes.

Perfect Pairings

A natural match for seafood and light Mediterranean dishes. Try it with Caprese salad, baked seabass with lemon potatoes, seabream carpaccio, or golden deep-fried anchovies. Also excellent as an aperitivo.
