The fruit is grown on south-facing, well-drained granite slopes at the family-run Polgoon estate in Cornwall. In the winery, the grapes undergo gentle pressing with brief skin contact to extract a pale pink color before cool fermentation in stainless steel tanks to preserve fresh, aromatic purity.
