Vineyard & Production

Grapes are sourced from HVE3-certified vineyards and harvested at night to preserve flavour, freshness, and aromatic intensity. After full destemming, the grapes undergo a brief 2-hour cold maceration before pneumatic pressing. The must is cooled to 4°C and stabilised on lees for 10 days with CO₂, before fermentation at cool temperatures to retain aromatic freshness and structure. Unoaked.

Tasting Notes

Pale yellow with brilliant green reflections. Fresh notes of lemon and grapefruit on the nose. The palate is exotic, lively, and vibrant — citrus-driven richness with an elegant, persistent finish that keeps you reaching for another glass.

Perfect Pairings

A classic match for oysters, shellfish, and seafood platters. Also excellent with grilled sea bass, moules marinière, and light Mediterranean dishes. A brilliant summer aperitif on its own.
