Paxton Single Vineyard Jones Block Shiraz is a rich, full-bodied wine from a unique ridge-top site in McLaren Vale. Deep crimson with purple hues, it opens with savoury notes of nutmeg, cinnamon, and cracked black pepper layered over ripe mulberries and stewed plums. The palate is concentrated, with luxurious oak integration, bright primary fruit, and exceptional length and power.

Meet the Producer

Winemaker Ashleigh Seymour and Paxton Wines focus on producing organic and biodynamic wines that reflect the unique terroir of McLaren Vale. The estate combines careful vineyard management with precise winemaking to create wines of elegance, complexity, and regional authenticity.

Production

Grapes are hand-harvested at optimum ripeness and kept on skins for 15 days. Fermentation involves gentle pumping over and plunging twice daily to extract colour, flavour, and structured tannins, resulting in a wine with depth, intensity, and layered complexity.

Maturation

The wine is matured for up to 20 months in French oak barriques (40% new), followed by six months in bottle prior to release. This careful ageing adds richness, structure, and a polished finish while preserving varietal expression.

Tasting Notes

Deep crimson with purple reflections, this Shiraz offers aromas of nutmeg, cinnamon, and black pepper, alongside ripe plum and blackcurrant. The palate is full-bodied, rich, and layered, with bright fruit, elegant tannins, and a long, powerful finish.
