Paolo Leo crafts wines that reflect the unique terroir of Salento, where the vineyards benefit from cooling breezes from both the Ionian and Adriatic seas. Focused on quality, tradition, and sustainability, the estate produces wines that are rich in character, expressive, and balanced.

Production

Grapes are carefully destemmed and fermented at a controlled temperature of 25°C for 8–10 days. Maceration on the skins for 12–15 days, with repeated pump-overs, ensures full extraction of colour, aroma, and tannins. The wine is then gently pressed to retain elegance and structure. The wine is matured for three months in stainless steel, followed by 12 months in a combination of American and French oak barrels, creating depth, complexity, and smooth integration of tannins.
