The Florensac terroir, among the oldest vineyards on France’s Mediterranean coast, is unusual in its dedication to white wines. The cooperative Vignerons de Florensac place sustainability at the heart of their work, cultivating their vines with respect for the environment and embracing eco-friendly practices in both vineyard and cellar.

Winemaking

Under the guidance of oenologist Roques Stephane, the winery employs innovative green techniques. Natural methods are used to manage pests, and solar energy powers the refrigeration systems that keep grapes and juice cool for maceration and fermentation. After a gentle pneumatic pressing, fermentation takes place in stainless steel at low temperatures using cultured yeasts, with the wine then aged on fine lees with regular stirring to enhance richness and roundness.

Tasting Note

Pale yellow with green hues, this Picpoul is fresh and vibrant. Aromas of grapefruit and citrus leap from the glass, leading to a palate of bracing citrus and ripe stone fruit. Bright acidity ensures a clean, mouth-watering finish, making this wine as refreshing as it is versatile.

Viticulture

The vineyards are planted on elevated sites with clay and limestone soils, farmed using sustainable methods rather than chemical intervention. To protect the grapes’ delicate aromatics, harvesting is carried out at night when temperatures are cooler, preventing oxidation and preserving fruit integrity.
