Vineyard & Production

Following gentle crushing and fermentation in open-top tanks to extract rich colour and fine tannins, the base wine matures in American oak barrels for a period to build complexity. The wine then undergoes its secondary sparkling process, creating fine, lively carbonation while retaining the lush, opulent fruit character for which Mollydooker is famous before being corked and dressed for release.
