This sparkling Shiraz delights with bright, fine bubbles and a rich spectrum of flavours, perfectly balancing fruit, spice, and subtle oak complexity.

Mollydooker is renowned for crafting bold, expressive wines that combine precision vineyard management with innovative winemaking techniques. Each wine reflects the character of the McLaren Vale and Langhorne Creek terroirs while maintaining Mollydooker’s signature style—intense, approachable, and full of personality.

Production

After fermentation on skins, the wine underwent barrel fermentation to integrate oak flavours. Maturation took place in 100% American oak barrels, with 40% new and 60% one-year-old, allowing the wine to develop depth, texture, and complexity. Malolactic fermentation was applied to enhance smoothness and richness. No fining agents were used.

The wine opens with bright, delicate bubbles that bring energy and fun to every sip. Aromas and flavours of cherry and fresh plum dance alongside cocoa and liquorice, while fragrant oak contributes layers of vanilla and complexity. The palate is generous, lively, and full of sparkle, making it a truly festive Shiraz.
