Vineyard & Production

The grapes are hand-harvested from select old-vine Cabernet Sauvignon parcels situated in McLaren Vale, where ancient soils and Mediterranean maritime breezes create ideal growing conditions. Upon arrival at the winery, the fruit is destemmed and gently crushed into open-top fermenters. Fermentation takes place with regular cap management to extract deep ruby colour and supple, structural tannins. Following pressing, the wine undergoes malolactic fermentation and is aged for up to twelve months in American oak barriques (predominantly new and second-fill) before final barrel selection and bottling.
